Tu BiShvat is considered the new year for the trees, or the Jewish arbor day. It's considered the time of the year when Spring officially begins again (also it's a pun on the gin in the cocktail - I know, I know) and everything comes back to life. Everything in this cocktail is at its peak right now, making it even more appropriate.
- 1.5 oz gin
- 1 oz grapefruit juice
- 3/4 oz rosemary simple syrup*
- 1/2 oz oz lime juice
- Extra rosemary or lime for garnish
Pour all the ingredients into a cocktail shaker with plenty of ice. Shake well and double-strain into a stemmed cocktail glass (a coupe or martini glass). Garnish with a small branch of rosemary or a lime wedge.
*Rosemary syrup: Boil equal parts sugar and water to a boil along with a very large bunch of fresh rosemary.
